You Are What You Eat: Pork Butt
Little piggies are having a resurgence in menus all over the city. The animal's most succulent parts, it's stomach and ass, are being served and eaten in the trendiest eateries around. (Those creative types like their pig.)
Some of my favorite pork dishes include the Korean-inspired Steamed Buns with pork belly, cucumber, hoisin, and scallions from Momofuku Ssam Bar on 2nd Ave.
Or try the juicy Pork Butt with navy beans and cabbage from Little D. in Park Slope. (Their duck is also delicious.)
